CHICKEN WITH PEACHES
Ingredients:
Four chicken quarters
3-4 tablespoons oil
2 tablespoons onion soup mix
4 cooked peaches in 1 1/2 cups liquid (or canned)
Instructions:
Begin by cooking the peaches. Halve them, remove pit,
inspect. Cook in about 2 cups water with sugar to taste. Cook
till still firm.
In saucepan, heat up oil and sprinkle in soup mix. Don't let
it scorch. Add chicken parts, skin side down, and fry on
medium heat for 10 minutes.
Add liquid from peaches and boil. Continue to cook on small
flame in covered saucepan for about an hour.
Add the peach halves and cook for another half hour. Serve
hot with one half peach per serving. Delicious with plain
rice.
NOODLE-PEACH CASSEROLE-CAKE
Ingredients:
One 400 gr. package of wide noodles
4 eggs / 1/4 cup oil
3 teaspoons instant vanilla pudding
vanilla / 1 cup sugar
4 fresh peaches or 8 canned halves
100 gram checked raisins
Topping:
3/4 package marg.
3/4 cup sugar
2 heaping cups flour
1 teaspoon vanilla (cinnamon opt.)
2 tablespoons oil
Instructions:
Heat oven to 180 C. Smear pan with margarine. Cook noodles in
salted water -- boiling only for 5 minutes. Rinse.
Mix noodles, eggs, oil, pudding, sugar and vanilla. Pour one
third into baking pan.
Arrange the peach halves over the noodles and sprinkle
raisins all around. Cover with rest of noodle mixture and
smooth over.
Crumb Topping:
In mixer bowl, mix margarine, sugar, flour and vanilla to
pebbly consistency. Add oil to create larger lumps
(streusel). Sprinkle coarse lumps evenly over the noodle
mixture and bake for about an hour. Freezable!
PEACHY FRUIT SOUP
4-5 fresh peaches or one can
1 plain leben / 2 peach flavored yogurts
1/2 cup cold tea / pinch salt / sugar to taste
2 tart Grand apples, 2 tablespoons lemon juice
Blend peaches first without liquid, then add everything
except for apples and lemon juice. Taste.
Peel and dice apples finely, coat with lemon juice, add to
peach mixture. Serve cold.
