Cooked Date Cake

A delicious, Tu Bishvat treat based on dates and wheat, two of the seven species. Easy enough for young children to make.

Ingredients:

1 cup sugar or less

1 margarine

1 container (450 gr.) mashed dates (no checking required - comes with Eida hechsher)

2 eggs, beaten

4 cups plain crushed (not too finely) biscuits

1 teaspoon vanilla or rum

1 cup chopped nuts (optional but recommended)

Instructions:

Cook first three ingredients until thick, stirring well. Remove from heat and add eggs, vanilla, nuts and cookie crumbs. Mix well. Pour into wax-papered pan and pat even. Top with coconut. Chill well. Cut in small squares (this is sweet and very filling) or form in small balls after slightly cooled and roll in coconut or crushed nuts, then freeze.
