WHAT'S COOKING?

Sometimes called `lecho' in its Israeli incarnate, this Hungarian condiment is an easy side dish to put together. Serve immediately or place on blech before Shabbos as a Shabbos night chicken-rice accompaniment. Use the spicy paprika option if enjoyed.

Ingredients:

2 tablespoons oil

2 medium onions, sliced

4 large red bell peppers, cored and sliced

3 large ripe tomatoes, peeled and diced (substitute 1 28. oz. of tomatoes, well drained)

1/2 tablespoon sugar

1/2 tablespoon salt

1 tablespoon sweet paprika

spicy paprika to taste

Instructions:

1. Heat oil in a large skillet. Add onion and cook over low heat for 5 minutes, stirring frequently.

2. Add red pepper slices, and continue to cook for an additional 15 minutes, stirring frequently.

3. Add tomatoes and seasonings, cook for an additional 10-15 minutes, stirring occasionally. Remove from heat and adjust seasoning. Yield: about 8-10 side dish servings.
