Chocolate Sorbet

A Rosh Chodesh treat to put you in the high! Suitable as a Purim dessert. Much less calories than ice cream and easily scoopable.

Ingredients:

2 cups sugar

1 1/3 cup unsweetened cocoa powder

3 cups water

2 teaspoons vanilla extract

3 tablespoons chocolate liquor or brandy (optional, but opt for!)

Instructions:

1. Combine sugar and cocoa in a heavy saucepan. Gradually mix in water to form a paste.

2. Place over medium heat and bring to a simmer, stirring while sugar dissolves. Increase heat and bring to a gentle boil. Boil for 1 to 2 minutes, watching carefully, until syrup is a dark, glossy brown. Remove from heat.

3. Stir in vanilla and liquor. Pour into an airtight freezer container. Cover and chill in freezer. Optional: serve with parve whipped cream. Yield: 8 servings.
