Back to chometz and summer dairy Shalosh Seudos. Try
this superfancy, extra special pie.
INGREDIENTS:
3 egg whites
1/2 teaspoon salt
3 tablespoons and 2/3 cup sugar
1 teaspoon vanilla
1 1/2 cup water
4 1/2 tablespoons cornstarch 1 9-inch
baked pie shell
1/2 cup sweetened whipped cream
or 4 oz. parve whipped topping
2 oz. semi-sweet chocolate, curled or
grated
chopped nuts (opt.)
INSTRUCTIONS:
1. Beat egg whites with salt until stiff.
Add 3 tablespoons sugar and vanilla. Continue beating until
creamy.
2. Heat water (in a 1 qt. glass measure in
microwave - or in pot) for 2 minutes. Combine cornstarch and
remaining 2/3 cup sugar; gradually stir in hot water,
stirring constantly. Heat (in microwave) another 1 1/2 to 2
minutes, stirring every 30 seconds constantly, until
thickened.
3. Pour slowly over egg white mixture,
beating as you pour. Cool slightly, then fill pie shell.
Chill at least 2 hours.
4. Spread pie with whipped cream, then
sprinkle with chocolate and nuts.
